Ray’s Prawn Curry

Prawn Curry with Basmati Rice

Ingredients
  1. Pack of Frozen Large Prawns
  2. 4 heaped teaspoons Medium Curry Powder
  3. 1 heaped teaspoon Cumin
  4. 1 heaped teaspoon Turmeric
  5. 1 Tin Copped Tomatoes
  6. 1-2 Large Onions
  7. 4-6 Cloves Garlic
  8. 1 Large Red Pepper
  9. 1 teaspoon Corn flour
  10. Basmati Rice 75g per person
Curry Sauce
  1. Pour a large lug of oil in a pan
  2. Add Turmeric, Cumin & Curry Powder
  3. Mix in the oil until if forms a thin paste
  4. Heat the paste slowly for a couple of minutes until the flavours are enthused
  5. Add the onions and stir slowly for a couple of minutes
  6. Add more oil to maintain the thin paste if required
  7. Add Garlic mix for another minute or two
  8. Add the Prawns stirring occasionally until heated through
  9. Add the Peppers and Mushrooms
  10. Add the tinned chopped tomatoes and simmer for 10-15 minutes
  11. When cooked then add a teaspoon of Corn Flour in a small glass with about an 2.5 cm of water and mix well
  12. Add Corn Flour mixute to Curry Sauce, simmer for another 5 minutes to thicken the mixture a little
  13. Curry is then ready to serve
Rice
  1. Measure out about 75g per person of Basmati Rice
  2. Add to boiling water in a pan and cook for 10-12 minutes
  3. Drain and serve
Notes
  1. Can be served with Nan, chapatis or papadoms and onion salad.
